Two-minute Tomato Soup
A blended recipe by Claire Kariya, clinical dietitian at Natural Tube Feeding Inc.
Ingredients
1 cup low-sodium marinara/passata sauce
¾ cup water
2 slices toasted whole wheat bread
½ cup ricotta cheese (substitute with hummus for dairy-free)
1 tsp olive oil
Method
Blend all ingredients. Add more water as needed for a thinner consistency.
To enjoy this by mouth, heat in a saucepan and serve with a piece of toast on the side.
