Strawberry Shortcake Overnight Oats

A blended recipe by registered dietitian and Blended Tube Feeding founder, Hilarie Geurink.

Ingredients

⅓ cup dry oats

¾ cup whole milk

¼ cup cottage cheese, 4% fat

¼ cup strawberries, fresh or frozen

1 tablespoon hemp hearts

1 ½ tablespoons honey

Method

Add the dry oats, whole milk, cottage cheese, hemp hearts and honey to a jar or container with a lid, then stir together.

Add sliced strawberries to the top and put on the lid. Place in the fridge overnight (or for at least 4-6 hours).

Next morning, spoon out the overnight oats into a blender and blend until the mixture is smooth and without any lumps. This should take about 60 seconds, but it may be longer depending on your blender. Aim for a thin pancake batter consistency. Strain through a sieve if required to remove lumps. It should make up to a volume of around 420ml.
