African Peanut Stew
A blended recipe by Claire Kariya, clinical dietitian at Natural Tube Feeding Inc.
Ingredients
1 cup sweet potatoes, peeled, chopped and steamed
½ cup boiled red lentils (cook from dry or use canned)
½ cup vegetable broth
½ cup water
2 tablespoons smooth peanut butter (or any nut or seed butter)
1 tablespoon raw white onion, chopped (optional)
Pinch of ground cinnamon (optional)
Method
Blend all ingredients together. Add more broth or milk if a thinner consistency is desired.
Garnish with a sprinkle of cinnamon.
To enjoy by mouth, heat in a saucepan, season with salt and pepper.
